All seafood tastes different, but most of it (like prawns, muscles, fish) shares a strange aftertaste that lots of people don't like. What is it about seafood that creates this?

The only time I have ever noticed an aftertaste with seafood is when it has been fried. I believe that is due to the oils that they are fried in. Fresh cooked seafood has never presented an aftertaste to me.

Absolute fresh does not.
Not meaning spoiled, just not harvested fresh out of the water, or in a day or so.
