Just toss the ingredients in a bowl and top your toast.
BACON LETTUCE AND TOMATO BRUSCHETTA
1 clove garlic, peeled and chopped or 1/4 tsp. garlic powder
1 cup chopped leafy green lettuce
1/3 cup favorite crumbled cheese
1/4 teaspoon ground pepper
1/4 teaspoon salt
2 tablespoons chopped fresh basil leaves or 1/8 tsp. dried
basil
3-4 Roma (plum) tomatoes, chopped
8 -10 slices bacon, cooked and crumbled
12 slices of Italian bread OR 12 small rolls, cut in half
In medium bowl, stir together all topping ingredients; set aside. Brush olive oil on both sides of the bread slices. Place the bread on a baking sheet. Bake at 400 F. for 7 minutes on each side or until crisp and golden brown. Cool. Spoon about 1 tablespoon of the topping on each toastround. Makes 24 rounds.

I'm a big apple/peanut butter or cheese gal.
I like these kind of quick comforty flavors.
One of my favorites is toasting an English muffin, then while it's still hot, put on crunchy peanut butter so it gets all warm and gooey and topping with slices of super cold, crisp apples.....
SO YUMMY and you get complex carbs.
If cheese is easier to please - cream cheese instead of peanut butter on the above works well.
But if you want to do something more.... you will LOVE scrambled eggs (then just before they are almost done) - put some room temp. cream cheese in them..... you can top with some sliced tomatoes or herbs if you want to get fancy, but this is the yummiest quickie snack!!!
Both are healthy choices, too - you are getting protein and carbs and nutrition - vitamins and minerals! Enjoy!

Snack Mix
1 (10 ounce) package mini twist pretzels
1 (12 1/2 ounce) box Ritz Bits miniature crackers (or Ritz sticks snack crackers)
1 (9 3/4 ounce) can salted cashews
1 (7 1/4 ounce) package bite-size cheddar cheese goldfish crackers
1 (1 ounce) package ranch dressing mix
1/2 cup vegetable oil
In a very large bowl, combine the pretzels, Ritz bits, cashews, and crackers.
(I use my largest roasting pan for this.).
Sprinkle evenly with dressing mix, then drizzle with oil.
Stir gently but thoroughly until all pieces are well coated.
Store in an airtight container.

"Puppy Chow" Snack mix
1 (12 ounce) bag chocolate chips
1/2 cup butter
1 cup peanut butter
1 (12 ounce) box Crispix cereal or similar cereal
1 lb confectioners' sugar
Melt chocolate chips, butter & peanut butter over medium heat. Stir to blend.
Pour over Crispix in large bowl.
Pour confectioners sugar in paper grocery bag.
Add Crispix and shake vigorously until it breaks apart. Serve in new doggie dish.

I like mini bagels with peanut butter on them. They're quite nice if you toast the bagel first in a toaster or toaster oven. Also cheese and crackers is good. You can use anything kind also. I really like the Olive Oil and Rosemary Triscuit crackers and a sharp cheddar cheese.

I have a chef friend, Nancy Russman in Louisville Kentucky who spends a lot of her time teaching kids to cook and eat healthier snacks. When she first met me and my son there at a Julia Child birthday party I was cooking for, she made a big impression on him, much bigger than Julia! Probably because she very short, and closer to his size than Julia. She taught him the cheer of "Go Cats!" in support of the Louisville Wildcats. We also had a nice tour of the Louisville Slugger Baseball Bat Factory, a visit to a bourbon distillery for another Julia party, and a visit to my favorite goat cheese maker, Judy Schad in nearby Greenville Indiana. This is one of Nancy's kid friendly recipes that the kids could help make.
2 tablespoons honey
4 tablespoons peanut butter
2 cups granola
2 to 4 tablespoons milk, or as needed
In a large bowl, mix together the honey and peanut butter. Using a spatula, stir in the granola. Add enough milk to just moisten--you want it to stick together. Form into balls. Chill until ready to serve.

6 cups vanilla yogurt
4 firm granola bars, any flavor: peanut butter, cinnamon, oats-n-honey
1/2 cup chopped nuts: walnuts, pecans or hazelnuts, toasted
1/2 pint strawberries, hulled and sliced
Pour yogurt into a bowl. Add granola bars to a plastic food storage bag and crush. Add to yogurt along with nuts. Stir to combine all ingredients and transfer to cups. Top with strawberries and serve.

When our restaurant Tru won its first 4-star review, my partners and I thanked the staff with a "staff meal" of caviar, champagne and foie gras. So when the second 4-star review came in, we were stuck for a way to celebrate! We decided to go the other extreme, with a feast of the best bratwurst (a Chicago classic), beer, and s'mores. I think we got even more respect for the second meal than we did for the first. It takes nerve for 4-star chefs to serve s'mores! My dear friend Karen reintroduced me the molten, aromatic pleasures of this childhood treat. Just combine 3 bite-size ingredients ? graham crackers, milk chocolate, and marshmallow ? and apply heat. Add your own summer camp memories and serve immediately.
32 miniature graham crackers or 8 regular size graham crackers, broken in 1/2
2 milk chocolate bars, the kind that can be broken into squares
8 marshmallows
Preheat the oven to 400 degrees F.
Lay 1/2 of the graham crackers on a cookie sheet. Top with chocolate pieces to cover. Use kitchen scissors to snip the marshmallows in 1/2 horizontally if using miniature crackers and place 1/2 a marshmallow on top of each graham cracker. If using regular size crackers use a whole marshmallow.
Bake until the marshmallows are puffed and golden brown, about 3 to 5 minutes. Remove from the oven and top with the remaining graham crackers, pressing down slightly to make a sandwich. Serve immediately, while still warm.
these are pretty good... enjoy
