they are different varietals ( made from different grapes). chardonnays range from light citrus flavors to full-bodied creamy, oakey flavors; pinot grigos are crisp, light-bodied dry, with good fruit; sauvignion blancs are herbaceaus, grassy, fruity medium-bodied.

Chardonnays can be 'big' wines with a lot of complex flavours, and there is a wide variety, depending on how they were made (matured in oak casks, not oaked, put through a second maloactic fermentation, etc.).
Pinot grigio can be smooth, almost seeming oily with less complex flavours. Sauv blanc is delightfull, fruity, almost floral or herbacious in flavour, and is easy to appreciate and to drink. A lot of 'new' white wine drinkers take to Sauv blanc, but find Chardonnay too strongly flavoured. - they often 'move up' to chardonnay later.

Chardonnays (good ones) have malolactation, which gives it the Big Butter, Sauv blancs are next to Chards, but aren't big butter, but has a slight sweetness.
Grigios are rather overly sweet for me

Each one of those names is a different type of grape.
Some are originally named by region i.e. Burgundy, France.
Or, true champagne may only come from Champagne, France. You will notice by law the rest are actually called sparkling wines.
