OVEN - CRISPY FRIED CHICKEN
1 c. coarsely crushed herb-seasoned stuffing
1/4 c. grated parmesan cheese
1 tsp. paprika
1/2 tsp. salt
Dash pepper
1 egg beaten
3 tbsp. milk
1 (2 1/2-3 lb.) broiler chicken, cut up
6 tbsp. butter
Dip chicken pieces in milk and egg mixture. Coat with stuffing mixture. Place chicken in buttered 9x13-inch dish. Drizzle with butter. Bake at 400 degrees for 45-50 minutes or until tender.
OR
CRISPY BUTTERMILK FRIED CHICKEN
2 - 2 1/2 lbs. chicken
3/4 c. flour
2 tsp. salt
1 tsp. paprika
1 tsp. pepper
1 c. buttermilk
Mix flour, salt, paprika and pepper. Dip chicken in buttermilk and then into flour mixture. Cook chicken in oil, starting on medium-high heat, then, when chicken is browned, reduce heat to medium and cook an additional 30 to 35 minutes until chicken is done, turning occasionally.

Here is my favorite. Heart attack special.
Southern-Fried Chicken
1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard or oil, lard will give the best flavor.
1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.
2. In a large deep frying pan, melt lard over medium-high heat to 375 degrees. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels.

This is so good
CRISPY FRIED CHICKEN
2 1/2 to 3 lbs. cut up frying chicken
SEASONED FLOUR:
1 1/2 c. flour
1 tbsp. garlic salt
1/4 tsp. poultry seasoning
1 1/2 tsp. black pepper
1 1/2 tsp. paprika
Combine all ingredients; set aside.
CRISPY BATTER:
2/3 c. flour
1/2 tsp. salt
3/4 c. flat beer or water
1/8 tsp. pepper
1 egg yolk, beaten
Combine flour and seasonings in bowl. Combine egg yolks and beer. Add gradually to dry ingredients. Heat oil in deep fryer to 365 degrees. Moisten chicken pieces. Dip in seasoned flour, then batter, then back in seasoned flour. Fry in hot oil 15 to 18 minutes until well browned. Drain on paper.

Try this:
8 to 10 pieces of chicken
salt
black pepper
creole seasoning
ziploc bag of flour 1/2 full
1/3 cup of milk, 2 egg
mix the egg and milk together in seperate bowl. wash the chicken and put your seasonings on the meat then dip the meat in the bowl w/the milk and egg then put it in the flour take it out then dip it again then put it in the hot grease to cook do all the same way and enjoy.

Okay here's what I do, coat the chicken in mayo then roll in crumbled cornflakes then either cook in the oven or fry in oil. Mmm makes for a moist yummy chicken!
