I tend to be very analytical at times and sometimes it slows my processing and tends to make me slow to speak. Is that considered a weakness that may be discussed in a job interview?

Yes, I used that at every interview that I have dealing with finance. I say it's both, a weakness and a strenght. It's weakness because you don't make fast decision all the time which sometimes needed. Then, It's a strenght because you won't make decisions that don't have enought information to back it up. Of course I don't word it exactly like this but the answer to your question is yes.

There are two old expressions that are equally true. You need to embrace both and find a balance between them.
1) Look before you leap.
2) He who hesitates is lost
