Do you have any flour tortillas on hand? I made a Casadilla
for a late lunch awhile ago and used what I found in the fridge
for fillers. I sliced a Nathans hot dog and used half sliced.
And some left over fried potatoes, and two slices of tomato
diced up. I put the filling on top of a buttered flour tortilla and
turned the heat to med. high as the tortilla browned lightly
I had the filling spread out to heat up. Then I used two spatulas to roll and tuck in the sides and then I had it ready
to eat.
Oh yes, always spread the butter on the side you lay down
in the frying pan. Some people use two tortillas and don't
worry about rolling and folding up. But that is the modern way
and you have double the carbs if you're watching them.
You can have some fruit as I did with some cubes of water-
melon, and not feel too guilty. Fruit seems to be the right
accompaniment, for a Casadilla or burrito. And if the weather
is warm, it's very refreshing.

Frittata. Ham.
6 eggs beaten.
1 teaspoon oil.
½ cup grated cheese
200g ham.
Tomato.
Salt and freshly ground Black Pepper.
1 table spoon of Fresh chopped parsley.

Heat the fry pan and add oil on a low heat and add cheese, ham, tomato, salt and pepper to beaten eggs and stir in.
Pre heat the grill.
Pour in the egg mixture and cook for 5 minutes. Do not stir.
To finish cooking put under the preheated grill until the top is brown.
Serve sprinkled with the parsley.

EASY CHICKEN CASSEROLE

1 1/2 c. cooked chicken
1 1/2 c. cooked rice
1 c. finely chopped celery
2 tbsp. minced onion

SAUCE:

1 can cream of chicken soup
3/4 c. mayonnaise

TOPPING:

3 tbsp. melted butter
1 c. Special K cereal

Mix together sauce, chicken and rice. Place in 9 x 9 inch greased pan. Spread topping over mixture. Bake at 350 degrees for 40 minutes. Freezes well.

It's 100 degrees here where I am at and I already told the family sandwiches for dinner!
if I was alone I would either make me a scrambled egg wrap
or a bowl of cereal.

i want soup but it is 103 degrees out side so soup it is but for you baby spinach and lettuce salad

get a bag of baby spinach and a fresh lettuce head mix them up then get some meat (bacon, bacon bits, ham, turkey,chicken anything) and some cheese your favorite cheese
then any other vegetables or fruits or croutons or eggs just anything else you like on a salad
then some nuts your favorite kind then your favorite dressing just drizzle on top
then get some bread for the side

now you have a healthy and Delicious meal

How about some grilled chicken with a peanut suace or Lemon Grilled Chicken.So delish! Serve with grilled veggies and rice. Here's a few recipes:

Ingredients:
1 cup of peanuts
1 cup of steamed broccoli
1 cup of uncooked regular long grain rice
1 medium onion diced
1.5 cup of cooked rice
1.5 cup of boiling water
2 cups of broccoli pieces
2 teaspoons of ground ginger
3 chicken bouillon cubes
3 chicken breasts

Broccoli Peanut Chicken Instructions:

Heat your oven to 375 degrees. Add chicken, onion and 1 cube of chicken bouillon cubes (crushed) in a microwave cooking plate. Put them into the microwave and do not forget to cover the plate then stir it once. Then add ginger, boiling water, mushrooms, remaining cubes (crushed) and uncooked rice into the same cooking plate.

Let it cook in oven for about 30 minutes. Add broccoli and mix them, please check if rice is covered with water. Cook for another 10 minutes then cook it in peanuts, steamed broccoli and cooked rice.

Serve 6 people.

Lemon Grilled Chicken Recipe

Ingredients:
1 bay leaf
1/2 cup lemon juice
1/2 teaspoon poultry seasoning
1/2 teaspoon basil (dried)
1/2 teaspoon salt
1/4 cup olive oil
1/4 teaspoon black pepper (coarsely ground)
1tablespoon sugar
3 pounds chicken (cut in quarters)

Lemon Grilled Chicken Instructions:

Mix Into a small saucepan sugar, lemon juice m bay leaf, olive oil, basil, salt, pepper and poultry seasoning. Put the saucepan over a low heat and let it cook, a stir for about 2 to 3 minutes. Let it cool down to room temperature.

In a single layer, place the chicken (skin down). Try to put them in a 13 by 9 inch cooking dish. Over the chicken, put the lemon-juice. Then let it to room temperature for about 2 to 3 hours. Grill the chicken for about 7 minutes until it becomes a brownish color. You could achieve it by placing the chicken skin-side down on a grill with 4 to 6 inches above the heat.

Brushes with marinade then turn skin side up and let it grill for an additional 7 minutes. Return it and brush it with marinade. Let the white meat grill for an additional of 10 minutes, dark met 15 to 20 minutes, brushing them with marinade and turn them.

Serves: 4 people

Just cut the recipes in half and store or freeze the remainder for another day.
