Go to DIYnetwork.com and look it up. Great Do-IT-Yourself site.

Empty them first. Then stare at the back of the cabinets to see where they are fastened to the wall. It is typically either with screws that go through a ledger board mounted on the wall or with screws that go into the wall studs. There may also be some screws that go through the side of one cabinet into the matching side of the next cabinet. Check also whether there are wires for internal lamps that need to be removed before the cabinet comes down.

Get a couple of helpers to hold the cabinet up. Then use a power screwdriver to take out the screws and lower the cabinet down for its trip to the dumpster or to a recycling place.

If that doesn't do it I see a lot of take-downs on the cable shows in which they use a large prybar to smash the cabinets off the walls. That seems a desperation move because you can end up needing to do wall repairs before the new installation.

It really helps if you are willing to destroy the old cabinets because until you have taken a couple off, you have no idea how they are mounted and even after you may find different methods. Using a reciprocating saw to cut into the projecting parts means you are not fighting the rigidity of the structure as you pry on what remains of the backing.
If the "old" ones are not too old and not covered with layers of paint, look for the screws that hold modular cabinets together (in the frame behind the doors) and look for screw inside holding them to the wall. Take out as many screws as possible.

REMOVE BY USING A BOARD UNDER CABINETS FIT SNUGLY TO ACT AS A SECOND HAND, THEN THERE SHOULD BE SCREWS/NAILS INSIDE THE CABINETS THAT NEED TO BE REMOVED.
INSTALLING - YOU SHOULD NAIL A SMALL BOARD AT THE BOTTOM EDGE WHERE CABS. WILL SIT AND SET CABS ONTOP OF THAT BOARD REINSTALL SCREWS
