A fritatta is a good choice... similar to quiche, but not with cream or in pie crust. Here's a version that uses some common "dinner" ingredients but still tastes like Breakfast!

FRITATTA

6 eggs
1 c. milk
1 green onion, minced
1/8 tsp. pepper
2 tbsp. butter, melted
1 med. zucchini, sliced thin
Mushrooms, sliced thin
1 c. shredded cheddar cheese
5-6 strips bacon, crumbled, fry crisp

Beat first 5 ingredients in a bowl. Stir in zucchini and mushrooms. Pour into pie plate. Sprinkle 2/3 of cheese and bacon into it. Fold a little. Top with remaining cheese and bacon. Bake at 400 degrees for 20 minutes or until golden brown.

NOTE: Zucchini and mushrooms are optional. Use a little less milk when using zucchini.

Make gravy out of the sausage and serve it over the biscuits! Great supper dish.

Add some cheese to the scrambled eggs.

Add some fresh fruit and you're done!

I make what I call camp breakfast.
what you do is get bacon which you can fry up or get the pre cooked. shredded potatoes, eggs, cheese, onions and peppers ( last 2 optional)

brown the shredded potatoes enough for a serving each put in cassorole dish, make scrambled eggs with milk,( 2 eggs per person) add to dish
and.add cheese, onions and peppers . bake for 35 minutes and you can cut it and put crumbled bacon on top.

You can make candied bacon by cooking it in the oven. Sprinkle some brown sugar on each piece, cook in 450 degree oven until it's done. You can also make a frittata with potatos, eggs, sausage, vegetables, and bread. You can find many easy recipes for them on the web.

Make an omlette, fritatta, pancakes, french toast, waffles, eggs benedict, etc. You could also do huevos rancheros, machacas, or poached eggs on toast.

You could make omlettes, hashbrowns, french toast, pancakes, fruit pizza (take store bought sugar cookie dough, roll it out like a pizza crust and bake it, cover it with strawberry cream cheese, top that with sliced fruit, strawberries, bananas, kiwi, mandarin oranges or whatever you like)
