I made sauerbraten and the sauce was great, but the meat was stringy when it fell apart. It was just too much chewing.

After I marinade the meat, can I cook it in the oven uncovered like a regular roast and serve it medium-rare. I would have the flavor and not all that stringy meat that falls apart. Will the meat slice if I do it this way or will it still fall apart from the marinade.

Yes you can. But I suspect the cut of meat used was more at fault. Sirloin roast, eye of round work great and should not be stringy. The marinade does very little as far as tenderizing the meat, just flavor. Of course it was originally a preservative.

meat to use sauerbraten is usually beef. You can slice the way you like and cook it tenderly slowly.

What kind of meat were you using? Did you cut it against the grain or with the grain?
