try adobo. filipion make adobo with chicken necks maybe yo can experiment with turkey necks.
CHICKEN ADOBO
3 pounds skinless chicken breast
1/4 cup vinegar
1 tablespoon soy sauce
1 head garlic, crushed
8 whole peppercorns, crushed
Wash chicken. Cut chicken into serving pieces. Add vinegar to chicken in 4 quart saucepan. Add soy sauce and rest of ingredients. Do not stir chicken until it has started to boil. Cover and simmer chicken till cooked, approximately 30 to 45 minutes. Add water, if necessary. Remove chicken. Fry some garlic in butter. When browned, add chicken without liquid. Fry till browned. Add liquid and simmer for 5 to 10 minutes.
now replace the chicken pieces with turneck necks
OR
why don't you boil the necks with carrots and leeks and onions with a little herbs to make a broth. you can freeze it then use it in different recipes whrer broth is needed.

Smothered Turkey Necks ( the most moist part of a turkey succulent )
Brown turkey necks in a heated dutch oven with a little vegetable oil. When well browned add chopped onions,bell peppers, banana peppers and garlic. Season to taste. Add a cup of water and cook until tender. add water as needed.

Make stock with them, but roast them first. Cut up your veggies (carrots, celery, and onion) and mix them with your turkey necks. Put a little olive oil, salt and pepper on all of it, put it on a cookie sheet and stick it in the oven until they are roasted. This will give you a nice deep, dark rich broth. Some don't like the dark poultry broths, but I think they have a deeper more robust flavor without having to add a bunch of salt.

A great stock! You can use the stock to make your "quick" meals taste like you've been cooking all day. Just simmer the necks with some aromatics (onions, celery, carrots, garlic, thyme, rosemary, sage, etc) for a couple of hours. Skim the fat off the top, let cool and store in the freezer or fridge for later.... like making a killer tomato sauce from scratch (not as hard as it sounds) or a great soup!

Roast them with the turkey or boil them for an hour or so in a little water or chicken broth, separate the meat from the bone, return to the broth if you boiled them. Use for either soup or gravy. I add the roasted meat to the giblet gravy when I cook a whole turkey.

Good base for broth, along with any other leftover parts, bones, skin, etc. After cooking, carefully remove the neck meat, it's very good, and should be added into the soup.
