I am running XP and Word. When copied the new document starts with "Copy (11) file name".

You don't say how you are trying to delete?

Go to My Documents

Right click the file you want to delete and choose Delete from the menu. Confirm you want to send to recycle bin.

That should delete the file.

Empty recycle bin periodically.

Never heard of this not working.

It could be that you have a computer that copies documents. Because viruses can delete them. Check the settings on your computer.
