I have made this same recipe. You are going to love it. I used grilled shrimp and scallops. If I had to decide I would definitely go with the "chicken".

Chicken Piccata
4 (6-ounce) chicken breasts
2 cups all-purpose flour, seasoned with salt and pepper
1/4 cup olive oil
1/4 cup lemon juice
2 cups chicken stock
1 tablespoon capers
1/3 cup unsalted sweet cream butter
Dust the chicken breasts with the seasoned flour; shake of any excess. Heat the olive oil in a heavy sided medium saute pan over medium heat and then add the chicken breasts. Saute until golden brown on both sides. Once the chicken breasts are browned, drain the oil and add the lemon juice, chicken stock, and capers to the pan with the chicken. Reduce for about 5 minutes, turning the chicken breasts halfway through. The chicken is done when it is firm to the touch. Turn off the heat and add the butter, stirring until melted. Put 1 chicken breast on each of 4 plates and drizzle with remainder of the sauce.

That recipe sounds delicious......I'd cut up your chicken into strips or cubes and saute them in some bottled Italian salad dressing and then add that to the finished pasta and toss....Please let us know how it turns out......And it seems like chicken is the hands down choice amongst the pollsters here on YA............Enjoy!!!

Use the chicken- Poor a bottle of italian dressing over it and bake at 350 for 1 hour. You'll love it.

go with the chicken...you can grill it or saute it to add to your recipe. Or you can buy the chicken already grilled and cut up. Shrimp or sausage would also be yummy.

Try grilled chicken. Cut it in strips when your done grilling it (on a george forman grill recommended) and put it in the pasta.

I agree with everyone else, definitely go with the chicken. Season with whatever herbs you would like and either grill or pan saute in your favorite fat (i.e. olive oil, vegetable oil, butter).

Pan fry chicken strips in EVOO, thyme, basil, and oregano. Top with a bit of parmesean cheese.

i wouldn't use the ground beef unless you want to make meatballs. i would grill or roast the chicken and shred and add it to mixture at end.
