BBQ chicken - if you don't have a grill, you can either roast the chicken and slather it with barbecue sauce 10 minutes before you take it out, or use Barbecue flavored Shake & Bake!

A real good thing to have with potato salad and corn on the cob is southern style pork ribs with KC masterpiece bbq sauce, or some barbecued chicken with KC masterpiece bbq sauce. Both are real good either on the grill or cooked on the broiler in your oven.

What we like to have, are spare ribs. And you don't need a
grill, just an oven.
First you cut them to separate them, using pork with the
most flavor, pulling them apart. Then you sprinkle
garlic, onion, and maybe a bit of celery salts together over
the pieces. Then you brown them on the stove top, til done,
Then you wrap them in aluminum foil and put them on a
baking sheet for about two hours at 350 (moderate oven).
And they will be 'fall off the bone' tender to enjoy. You can also
add some barbeque sauce before wrapping the meat and
sealing it, if you prefer.
We've cooked ribs over the years and tried all the methods.
And it all comes back to great taste, and tenderness the
original way with just a few touches.

Ham always goes with potato salad. You can also make BBQ ribs on the stove top. Season and brown in a skillet. Cut into individual ribs and put into a large, heavy pot. Add BBQ sauce, and one 18 ounce jar of grape jelly. Simmer covered, a couple of hours. These are very tender and delicious. Fried chicken goes well too.

If you get a pork shoulder from the grocery and put it in the crock pot and make pulled pork bbq sandwiches that would be tasty with potatoe salad and corn on the cob

Something grilled - pork chops, hamburgers, chicken breasts

OK you do not have a grill. I would still do any of the above fried or baked.

GOLDEN BAKED CHICKEN BREAST

2 chicken breasts halved
4 teaspoons soft butter
2 tablespoons instant minced onion
1/2 teaspoon garlic salt
1/4 teaspoon paprika
2 tablespoons parsley, chopped

Heat oven to 425 degrees. Remove skin from chicken. Place in ungreased baking pan, spread butter on each piece of chicken. Sprinkle onion and garlic salt, paprika. Bake uncovered for 30 to 35 minutes or until tender. Sprinkle with parsley.

How about some good ole Buttermilk Fried Chicken??

First soak your chicken for at least 3 hours in salted ice water.Use a lot of salt it will not make the chicken to salty. Drain your chicken then cover with buttermilk and soak an hour or so longer.
Put flour in bag, shake excess buttermilk off chicken then drop a couple pieces of chicken in bag and shake pieces of chicken until flour coated. Continue until all pieces are flour coated. Place on cake rack until somewhat dry.
Pour about 1/2 inches of oil in a heavy fry pan. Heat until hot but NOT smoking. Fry chicken until golden brown on one side turn and fry on other side until done, about a 1/2 an hour or until golden on all sides. Do not crowd the chicken in the pan!!
This is the best way to fry chicken i know of. Yummy

Here are some options
Baked Ribs- Cook times (2-3 hrs)
Ingredients:
-(BBQ Sauce optional)
-Salt and Pepper
-Pork Ribs (Spare or Baby Back)
Directions:
Rubs ribs with Salt and Pepper and wrap in Foil (bbq sauce optional). Have the Shiny part of the foil showing and the "matted" side towards the meat. Bake at 275 for 2-3 hrs.

Chicken - On-the-fly Saltimbocco
Marinade chicken breast for 30 min in salt+water. Dredge in a little bit of flour (don't over cake it). Using a pan, Saute on medium-high heat (about 3-5 minutes on each side). Place sliced ham or proscuitto on top and place mozerrella cheese on top of the ham. Back in oven until cheese is melted.

Pork - Fried Pork Steak
Ingredients: Salt, Pepper, 1 egg+milk,Nabisco Crackers (any bread crumbs will do), and Parmesan Cheese.

Crush 10-15 crackers, shave parmesan, and combine with Salt and Pepper and place in large ziplock. Dredge Pork into egg+milk mixture, one at a time. Place pork in ziplock and shake, until pork covered in your mixture. After you have breaded all your pork fry them up in some butter.
