I do braised pork chops, easy and quick.
You need some 1 inch thick pork chops.
Season with garlic salt, pepper, basil, oregano and rosemary.
Heat a little oil in a frying pan to medium high.
Brown the chops.
Add a quarter cup of boiling water and a quarter cup of red wine.
Cover and turn down heat to simmer for about 20 minutes.
I usually serve with sticky rice and shoyu (soy sauce), apple sauce and green beans tossed with olive oil and balsamic vinegar sprinkled with paprika for color.

Season some flour with seasoned salt and pepper (freshly ground if you can).
Dredge pork chops in the flour, then fry in bacon grease or butter until nicely browned and pink in the middle.
Remove from pan and keep warm.
Use the pan drippings and brown bits to make gravy, adding enough bacon grease or butter and flour for the amount of gravy you want (about 2 Tbs of each per cup of gravy). Cook over medium heat until lightly browned, then add milk, stirring constantly until it boils. Reduce heat and simmer a few minutes.
Serve the pork chops with the gravy, mashed potatoes and fresh or frozen green peas.

For a pork roast, invest in a crock-pot. Just add McCormick's pot roast seasoning, cut up potatoes, and throw in baby carrots. For pork chops, consider grilling with barbeque sauce or marinating in Itallian dressing before baking in an oven for about 45 minutes on 300.
