once i tried a great couscous dish with salmon...ohh it was soo good.....but i don''t know the recipe....sorry
here's a similar recipe:

INGREDIENTS:

* 1 lemon
* 1 Tbsp. olive oil
* 1 onion, chopped
* 1 cup frozen baby peas
* 1-3/4 cups water
* 1-1/4 cups plain couscous
* 1 lb. salmon fillets
* 1 Tbsp. olive oil
* 1/2 tsp. salt
* dash white pepper
* 1 tsp. dried dill weed

PREPARATION:
Preheat oven to broil. Squeeze lemon juice from lemons and grate 1 tsp. zest; set aside. In heavy skillet, saute onion in olive oil until tender. Stir in peas, lemon juice and water and bring to a boil.
Stir in couscous, cover, remove pan from heat, and let stand for 5 minutes.

Brush salmon fillets with 1 Tbsp. olive oil and place, skin side down, on broiler pan. Sprinkle with salt, pepper, and dill. Broil for 8-10 minutes per inch of thickness, 6" from heat source. (Or, if using frozen prepared salmon fillets, bake or broil as directed on package.)

Serve salmon on couscous; sprinkle with lemon zest. Serves 3-4

I think all previous replied sound frightful. Try roasting a whole heap of veg (especially root veg) and sweet peppers all cut into largish chunks (eg onions quartered). I would try:

Onion and/or leek
A sweet root, eg sweet potato, parsnip - OR butternut squash
Roots eg beetroot, carrot
maybe some whole garlic cloves,
Nice sweet and colourful fruit eg cherry tomatoes, red, green and yellow sweet pepper
Herbs eg thyme

Cut these up into big chunks, roast the veg with a generous coating of veg oil for about 45 mins until tender. It'll take a bit of salt and pepper too. Then stir in the couscous so the jouices soak in. This is great if you top with grilled halloumi cheese and roughly chopped flat leaf parsley.

It's nice warm or cold as a substantial salad.

I love experimenting with couscous. I'll add spices, cook it to package specifications (often with broth in place of water), and add other ingredients while it's still hot.

Some different combinations I've enjoyed:
-A light vinaigrette, herbs, and chopped roasted vegetables (like eggplant, zucchini, and red pepper). If you add red onion, cumin, and feta cheese, it also makes a lovely cold salad.
-toasted almonds, diced dried apricots, fresh parsley, and extra olive oil
-lemon zest, fresh thyme, minced garlic, lightly sauteed arugula or spinach.

When I'm making it as a side dish, I like to pull in the flavours from the rest of the meal, using similar seasonings or a few ingredients from the salad. The possibilities are endless.

dont know about the measurements exactly but my friends used to make it all the time like this and it was great,
after making the cous cous
add sour cream
sugar
canned fruit
simple and good
or mixed veggies and butter,served with chicken

after cooking the cous cous mix it with some feta, cherry tomato's halved, and chopped green onions
