Deep-Fried Catfish
INGREDIENTS:
corn oil for deep-frying
3 to 4 catfish fillets, about 1 to 1 1/4 pounds
1/2 cup cornmeal
salt to taste, if desired
freshly ground black pepper to taste
PREPARATION:
Cut each catfish fillet in half crosswise.
Combine the cornmeal, salt, and pepper in a shallow dish.
Dredge the fish fillets in the cornmeal, patting to make the cornmeal cling to the fillets. Drop the fillets in deep hot oil at about 370°. Cook 5 to 10 minutes, or until crisp and brown.
Serve with cole slaw, fries, and hush puppies.

I've used catfish as cutbait and it works well. I'll fillet a 1-2 pound cat and then cut some of the meat along the spine for bait. I've used entralls before, too, and they work (although the turtles love that). I think the tail would be good for cut bait, but haven't used it. When I use cutbait I usually stick with bluegill, though. I prefer live bait and dip bait to cut bait, but you gotta go with what the fish are biting. My grandpa used dead chicks (he raised chickens) on a trot line.

This is our favorite way, and the customers like it too.
Get 3 cups of AP flour. Put one cup in a bowl, the other 2 cups in a pan. Season both flours with Cajun, garlic powder, onion powder, black and/or white pepper, and cayenne. Whisk in a WARM beer to the one cup of flour in the bowl. (The cheaper beer the better, I don't know why).
Dust the catfish really well in the flour first, then dunk in the batter, then drop into the fryer. When it's brown-ish and floating and fluffy, it's done!

u have to bake the catfish.
get 1-1/2 lb catfish
2 teaspoonsful of sour cream
1 clove of garlic(chopped)
1 teaspoonsful of onions(grated)
1/4 teaspoonsful of dry mustard
1 cupful of milk
2 tablespoonsful of plain flour
1 teaspoonsful of lemon juice
4 teaspoonsful of horse radish
method
arrange the fish on a non stick baking tray with the fish with lemon juice,get a small glass bowl seperate the 2 eggs into a bowl you need the whites not the yolks whisk up until they are fluffy and stiff peaks and fold in the sour cream and grated onion and garlic and mustard and pepper, sppoon the mixture all over the fish for 375f for 20 minutes until the fish looks apaque in colour. meanwhile melt some marg or butter in a saucepan and add plain flour and stir in some milk and srir until smooth and then add horseradish sauce. make sure the sauce is thick. put it on the fish if you let. has for side dishes make a salad like grated lettuce sliced,tomatoes etc

I cook catfish by dipping it in eggs so cornmeal would stick to it then frying it in a pan with some olive oil. Plus I use lemon once it's done.
