try slicing up the tomatoes, layer them, use some basil and fresh mozzorella slices. drizzel with a little olive oil.

I like the tomato and mozzerella recipies above, but my favorite use is bruschetta.
Dice the tomatoes fine and chop finely some garlic and basil. Chill in a bowl with olive oil and salt. Serve with bread or toast.
I also love to put them in pasta salad, or antipasto salad, with artichoke hearts, kalamata olives, fresh parsley, sliced shallot, and mushrooms, seasoned with basalmic vinegar.
I don't generally cook tomatoes (I prefer them raw) but if you're really using them up, Alton Brown has a great tomato sauce recipe at www.foodtv.com .

Stuffed Tomatoes:
2 cans Italian tuna in olive oil, drained and flaked
1 can artichoke hearts in water, drained and chopped
2 ribs celery, chopped
1/2 medium red onion, chopped
1/2 cup pitted kalamata olives, a couple of handfuls, chopped
3 tablespoons chopped flat-leaf parsley, a handful
1 lemon, zested and juiced
Extra-virgin olive oil, for drizzling
Salt and pepper
6 vine ripe tomatoes, red, yellow, or mixed
For stuffed tomatoes, mix tuna and next 7 ingredients to combine. Season with salt and pepper, to taste. Cut a thin slice off the bottom of each tomato to stabilize it. Seed and hollow out the tomato with a spoon over garbage bowl or into sink with disposal system. Season tomatoes with salt and pepper, then fill with salad, mounding the tuna up. The tomatoes are ready to serve or chill.
Here's one more:
4 ripe red tomatoes
House Seasoning, recipe follows
3 tablespoons extra-virgin olive oil
5 cloves garlic, minced
2 tablespoons fresh thyme leaves
1/4 cup Parmigiano-Reggiano
Cut the tomatoes in half crosswise, season with House Seasoning. Heat the oil in a small frying pan over medium heat. Add the garlic, and cook until just starting to turn golden brown, 1 to 2 minutes. Pour the garlic and oil into a heatproof bowl.
Oil the grill and set for high heat. Place the tomatoes cut side down and grill for 3 to 5 minutes. Turn over, top with the garlic oil mixture and continue to cook for another 3 minutes. Remove from grill and top with thyme, House Seasoning and Parmigiano-Reggiano. Serve immediately.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

Get out your crock pot and food processor!
make salsa and spagetti sauce to freeze or can.
but for tonight:
chop 4 large tomatoes, 1/2 cup fresh basil, 1 container fresh mozzarella balls, 1 tbs balsalmic vinegar, 1 tbs olive oil, salt and fresh ground pepper and mix all together in a large pasta bowl. Let sit for about an hour to meld all the flavor.
add a box of hot cooked spagetti and toss. Yummy.

As a nice side dish, my family loves tomatoes cut into bite size pieces then add mozzarella cheese cut into bite size pieces and then pour your favorite italian dressing and toss. My husband likes it real fresh, but my kids like it after it's been in the frig for a few hours.
Another good side dish type dish is to cut your tomatoes into bite size pieces, add fresh basil and onion (you can add a little green pepper if you like also) and a little olive oil and toss over pasta or tortellini.

Fried Green Tomatoes - pick while still green and firm. Slice, approximately 1/2 inch thick. Coat slices with preferred seasonings and yellow cornmeal; fry quickly in light oil. Drain, and enjoy. Old Southern staple, not just a movie.

For your green tomatoes,slice into circles,salt,pepper dip into batter/cornmeal, fry until golden brown, cool and eat.
For your red tomatoes, slice cucumbers,onions,tomatoes place in a bowl add one bottle of Italian dressing, let them sit in the frig for about 30 minutes, serve chilled.

slice them up, put a couple slices on a piece of bread, then salt the tomatoes, then add a piece of cheese, and another piece of bread. the BEST tomato sandwich you'll ever have!
