This is generally made in India, it gives a jelly like feeling. In hindi its called paya.

I think you are thinking of "gelatin" though it is not made from goat's foot here.

Gelatin needs to be refrigerated in order to gel. If that is not what you are used to working with, then you might want to hunt up some "agar" (sometimes called agar-agar). That is available in both sheet and stick form, The best place to find it is in a natural foods store.

Its called "Paya" !!! There is no English word for it since it's not an English dish. Most traditional dishes in any language are referred to by their original name the world over. Paya is one such example. As are Hakka noodles, jambalaya, biryani, etc.
