I've got a date Sat night and I promised to cook her a nice meal. I'm a pretty okish cook but this time I might have taken on too much. You see she's a bit fussy with food. She wont eat salads, tomatoes, cucumbers, peppers, and particularly likes chicken and mushrooms. Any ideas? Any ideas on how to play it safe??

An easy one pot dish is a chicken casserole. Get some chicken thighs and brown them off in a hot pan with clarified butter. To make clarified butter, take a block of butter and slowly let it melt in on a low, low heat. The clear fluid is what you want, as this is more heat tolerant than butter itself.

Once you have browned the chicken set aside.

In a casserole dish heat up some olive oil, and put in diced onion and chopped garlic. Cook them off until the onions are clear. Into this base add 1 & 1/2 litre of good chicken stock, whole black peppers, bouqet garni and an extra bay leaf, salt and pepper. Always taste to ensure it is how you want it.

At this point add you chicken thighs, and let simmer for a couple of hours on a low heat, with the lid on.

After two hours, add 300ml of fresh double cream, and some tarragon. The tarragon adds a nice aniseed flavour to cut through the cream.

In a DRY medium hot frying pan cook off your mushrooms. As mushrooms are sponge they soak up any fluids. Once cooked off, add salt and pepper, and then add to the casserole.

For your rice, use Basmati and ensure that it is well drained before cooking, this removes excess starch.

1 & 1/2 cups of rice into the pot and from the casserole add in 3 cups of the liquor the chicken is cooking in, and cook the rice as you would normally.

Once the rice is ready so is the casserole. Serve up and with it drink a nicely chilled Riesling or indeed a chilled Muscadet, both light and refreshing while eating your casserole.

Chicken and Mushrooms

INGREDIENTS:

* 4 boneless chicken breasts
* 1 tablespoon butter or margarine
* 8 ounces sliced mushrooms
* 1 can cream of mushroom soup
* 1 clove of garlic, minced
* 1/4 teaspoon leaf thyme, crumbled
* 1/8 teaspoon dried rosemary, crumbled
* 1/3 cup half-and-half
* salt and pepper to taste
* hot cooked noodles

PREPARATION:

In a large covered skillet, brown chicken in butter or margarine; remove to a plate and keep warm. Add mushrooms to skillet; sauté until golden. Stir in soup, garlic, thyme, and rosemary.
Return chicken to skillet. Cover and cook over low heat 30 to 40 minutes, stirring now and then. Blend in half-and-half; heat slowly. Taste and adjust chicken and mushrooms seasoning, adding salt and pepper, if needed. Serve chicken and mushrooms with hot cooked noodles.

Chicken and mushrooms help make a nice stir fry - gently fry a thinly sliced onion in olive oil until soft, add thinly sliced mushrooms, then on higher heat, small pieces of veg such as green beans, peas etc. Remove from pan and keep warm. Stir fry thin slices chicken until white, then add a sauce such as a 'Blue Dragon' stir fry one (hoi sin and garlic is great), and simmer gently for 5-10 minutes. Serve with plain boiled rice.

How about putting mushrooms and swiss cheese on top of a grilled chicken breast? Then maybe some good bread and a bowl of fresh fruit. Just an idea.

Chicken with cheese sauce, potatoes and vegetables... put a couple of pieces of asparagus over the chicken (cook it in a little olive oil on a griddle with some pepper).

Chicken and mushroom in a white wine and cream sauce, flavoured with tarragon. Served with sauteed potatoes, and a selection of steamed vegetables (baby carrots, mange tout, green beans - that sort of thing). Very traditional, very safe.

Lol she sounds like me! How about a chicken and mushroom pasta? Mushroom stroganoff? Mushroom risotto? Ricotta & mushroom rolled crepes? Hmm drool I want all these now!

roast chicken in a mushroom sauce their is an OK one in tesco with some roast/boiled baby potatoes a soup for a starter and a bemongue with a white chocolate melted on top for desert

how about a chicken chasseur?
but add large whole open cup mushrooms instead of chopped ones and slow cook it all day so the meat is really tender. add some green beans and mustard mash, lovely!!
