Hi Katrina, here's how I would say it, and I write these in Traditional Chinese:

1. Australian - 澳洲人 ( ào zhōu rén )

2. Chinese - 中國人 ( zhōng guó rén ) or 華人 ( huá rén )

3. What nationality? - 哪個國籍? ( nǎ ge guó jí ? )

Iloveyou is correct, except for Australia, where he is wrong. Luna is correct about Australia. However, only in technical situations does anyone say that for Australia. In normal conversation, we always say Ao zhou ren.
