For the same reason that I do not believe in Santa Claus, an invisible dude in the sky who knows if I am good or bad?
There is zero proof that a god of any type has ever been anywhere near this little planet! Or for that matter that Jesus was the son of a god.

Lack of facts
Different "deffintions" of a higher power (I personally say I believe in God, but I never mention the fact that my "god" is very different from theirs)
Fear of what it would mean to them.
A belief that there is nothing in it for them.
Hurt.
Confusion.
There are so many reasons, and often a person probably cannot give you an answer. perhaps the best answer is that they just, simply, "don't".

Because God doesn't want everybody:
John 6
44 No man can come to me, except the Father which hath sent me draw him: and I will raise him up at the last day.
and this:
Romans 9
17 For the scripture saith unto Pharaoh, Even for this same purpose have I raised thee up, that I might shew my power in thee, and that my name might be declared throughout all the earth.
18Therefore hath he mercy on whom he will have mercy, and whom he will he hardeneth.
I repeat, God does not want everybody. He hardens who He hardens, and has mercy on who he will have mercy on.
The Atheists who will never respond to Him God does not want! There are only a few on the earth that God wants in the first place. How blessed we are for we can respond to Him. If He didn't want us, we would be as interested like the Atheists are; which is not at all! God is not drawing them to Him, so that He can 'show His power in them.'
So what to do with that? Discern by the Spirit God gave you which to witness to, and which to allow to spoil and ruin. It's not up to us to attempt to save those who kick against the Gospel. Please remember this.
