I'm looking to recreate a sauce I used to get at a diner, so this is not a request for the traditional spanish omelette. The sauce was thick, almost like it was made with tomato paste and it had green olives, mushrooms, onions, maybe some other things like celery and was slightly sweet. The sweetness was one of the things that made it especially tasty so I'd like to find out how to achieve this without just adding sugar (like caramelizing onions and carrots and getting some natural sugars from them or some other ingredient) Can anyone provide a recipe or some ideas of how to recreate this? I don't want to just dump salsa in my eggs and call it a day. Thanks for your help.

Caramalizing onions is good but you might find that a little catsup will help if used in the cooking pocess. Celery can make it less sweet and even bitter. Cherry tomatoes are extra sweet but you have to remove the skins.

I would dice the onions up very fine before caramalizing them. Stick with about a third tomato past and use it to obtain the consistancy that you like. Olives and celery I would heat separtly and add last. Dry the olives off first to keep the vinegar taste down.

You can use 1015 onions to increase the sugar content as well. Have fun!

If you are talking about a Spanish omelet you are barking up the wrong tree. There is no sauce. A Spanish omelet is the same as a plain omelet except there are peppers, onions etc thrown in at he last minute for additional flavour and crunch.

I am sorry to say if you got this sauce at a restaurant it was seasoned with sugar. You as you said there are other ways to find sweet but 999.9 of restaurants won't go to that much trouble. Experiment to find your own.
Oh, if you want a restaurant style sauce get a good salsa and heat it. Not a boil but just hot.

Hmm I remember a sauce like this too but I havent had it in years, I wish I could remember the name. Maybe these will help!!!

2 tbsp. oil
1 tbsp. onion, finely chopped
1/2 green pepper, chopped fine
6 green olives, chopped fine
1 3/4 c. tomatoes
1 tbsp. sliced mushrooms
1/4 tsp. salt
Few grains cayenne

Add the onions, olives, and green pepper to the oil in a frying pan and cook a few minutes. Stir in the tomatoes and cook until mixture has nearly evaporated. Add the rest of the ingredients. Spoon over spanish omelette.
