You can do alot of things.

Even without getting extravagant, you can do a lot by experimenting with different breads and cheeses ( i like sourdoughs, and Trader Joes used to carry a wonderful sourdough rye) Something like apepperjack can change the whole flavor.

Depending on my mood, i might also add things, some of my favorites being sliced tomatoes, prosciutto, bacon, jalapenos, whatever grabs my fancy, (probably my overall fave would be: sourdough bread, a mix of American and pepper jack cheese, tomatoes and bacon)

You can also add a little variety, simply by changing up the different soups you have with it(at least I always have soup without, ultimate wet winter comfort food, especially with a glass of hot homemade apple cider)

So experiment a little, it is cheap, and you might even have some fun doing it.

Here's how to make my variation on a very simple grilled cheese sanwhich - it's easy and everyone loves it! ok, here's what you do- take 2 slices of sourdough bread, 2 slices of any of your favorite cheese/cheeses, and mayonnaise. Start to heat up your pan while your doing the following steps: take your bread and spread mayonnaise on each slice and put cheese on top of both sides then bring together the 2 halves into a sandwhich. On one side of the sandwhich put mayonnaise to act as the grease and flip the mayonnaise covered side face down onto the pan - while that side is cooking take a knife and spread the other side with mayonnaise. Once the first side is finished flip the whole sandwhich over until it's fully cooked.

TIP: If the grill is turned up to high you'll burn the bread and the cheese will not be fully cooked.

PS: I know this recipe may sound ordinary and boring but I promise if you do this recipe right this will most likely be the best grilled cheese sandwhich you've ever had. THE MAYONNAISE MAKES A HUGE DIFFERENCE! Whenever i make this sandwhich no one really wants a grilled cheese sandwhich but once they have a bite they ask me if I can make them one!

I like to use 2-3 different cheeses on my grilled cheese. Also, sometimes I add some onion to it. Gives it an awesome taste.

use deli style bread instead of the super soft white varities. still soft, but with a bit more substance to the bread. probably not actually hard crusts.

use cheeses other than american. swiss or colby jack, maybe. or mix things together!

add thinly sliced tomatoes before cooking. they will get cooked within the cheese...mmmm

add a spread such as pesto or sundried tomato spread.

add meat, such as ham or bacon.

for a mediterranean version, use olive oil and ciabatta bread.

or low fat, try a healthy spritz of cooking spray instead of butter/margarine.

dip your sandwich in tomato soup!

hmm i'm getting hungry for a sandwich now.

Really, you can put any type of cheese you'd like into it. The best cheese I have ever tasted is Jarlsberg. It has a sharp sort-of edge to it. It melts nicely with ham and yellow American cheese. It's the perfect combination. I highly recommend you try it.

Use thickly sliced crusty bread such as Italian with swiss cheese and a slice of ham or corned beef
OR
make monte cristos
Crusty bread with swiss cheese,ham,sauerkraut.
Dip the sandwich in egg/milk mix as you would for french toast and then grill.
Yummy.

Add ham or turkey or bacon and tomato. Use cheddar cheese or swiss cheese. Use different type of bread. EDIT: try a monte crisco, it's like ham and cheese then it is dipped in egg like french toast. I'm making myself drool over here. See what you started.

Put REAL mayonnaise on the outside instead of butter. Be generous with it. Makes it golden and crispy and adds wonderful flavor. And use a good multigrain or 100% whole wheat bread too. I make mine that way but use my homemade whole wheat oatmeal nut bread. They are awsome.

They're dee-lish!
