if i want a really good sandwich that has salami in it, it varies and can require a lot.
if i want a good salami sandwich, featuring the salami, i do this.......
good, crusty, french bread (plain old white will do in a pinch), great salami (thinly sliced), provolone, and real mayo. that's it. a good salami sandwich!
i save the ryes and the mustards for the beefs (corned, pastrami, etc.) the mayo brings out the fatty flavor of the salami.

You take one frescatta roll and sliced down the center. You need about 12 peices of salami if its the little salami, and 6 peices if its the big kind. Drizzle extra virgin olive oil on to one half of the roll (on the inside, not the crust) and top that with some lettuce. Any lettuce is fine, but I prefer baby greens. Put some salt and pepper and a teaspoon of olive oil on the greens, then layer a slice of provolone cheese on top of the lettuce. On the other half of the split roll put on the salami, then put the two halves together, and there you have a delicous salami sandwhich! And if you like mustard, please squirt a kiss of dijon or spicy brown mustard on to the salami. Sliced olives and sliced jalepeno peppers are also a VERY nice touch, just put them on top of the lettuce.

With Jewish Salami - use rye bread and Gulden's Mustard.
With Italian Salami (Genoa) - use Italian bread, provolone or Mozzarella cheese, lettuce, tomato slices, onion, oil and vinegar.

French Roll, Mayo, Salami, Monterey Jack cheese.
Put sandwich together and wrap in tinfoil. Put in oven at 400 degrees for 15 minutes. The bread will be toasted, the meat warm and the cheese melted. Enjoy!

I've always favored a nice, hearty whole-grain bread and a mild cheese like motzarella, creamy havarti or provolone with my salami; also try a thin layer of lettuce and a thin slice of tomato to garnish. Salami is very salty and overpowering, so don't use competing flavors like cheddar cheese, BBQ sauce, spicy sandwich spreads etc.

toast the bread in the toaster,
put mustard on the bottom piece on the bread,
next put extra sharp cheddar cheese,
then, warm the salami in the microwave for about 1-2 minutes and place directly on the cheese,
top it with the other slice,
eat with Lay's potato chips on the side!!!
