What I would like is to be able to take notes off of an EPROM and convert them to analog and be able to synthesize sounds in an analog way, not just ADSR (Attack Decay Sustain and Release) but the other frequencies that make up an instrument sound.

It has already been done, by many companies, for many years. There are some very very accurate renditions of instruments available, both in firmware (EEPROM) and in software. They have even recorded famous musicians playing their instruments, so you can pick a particular style of play (not just an 'instrument'). They have even recorded particular 'brands' of instruments. So, I can choose Issac Stern playing a 1653 Nicolo Amati violin if I want (just an example).

Companies like Korg, Yamaha, Soundblaster, and many others already have systems to do what you want.
