I sprinkle chives in and on just about everything. It has a mild onion flavor that compliments so many things. I have fresh grown chives, but I dry some to use all winter and use it on fish, potatoes, pastas, soups, stews...really just about every dish I make I sprinkle in some chives. Also if you sprinkle some on after you plate your meal, it is a great and tasty garnish!

put in mashed potatos
add to an omelet
add some to cream cheese and put on a bagel
mix with butter for chive butter
sprinkle on buttered noodles

Chives are good for almost anything. They're soo yummy! =)
You can put chives on your potatoes. Or if you're making soup, they're great for soup. Or if you are making noodles and meat, add some chives. They're tasty, sometimes crunchy, and has a great smell to your food. It can either be fully cooked, or raw. it doesn't really matter. you can eat it however you like

You could add some finely chopped chives to sour cream and top a baked potato.
They also are really good in lemon/butter/white wine sauce over chicken or fish.

Use a kitchen scissors and cut into small pieces.They're good on top of baked potatoes, in soups, salads, veggies. If you must cook with them, add them to the dish just before serving.

Usually, you don't cook chives. . .you throw it in at the very end to add a mild onion flavor. In my opinion, it is best with eggs. Try it out. . .I hope you like it.

I throw it into just about anything to which I want to impart a mild onion flavor. You can use it fresh or dried. Just throw it in -- it can be cooked in your dish or uncooked (like in egg salad). It's a delicate flavor, though, so don't waste too much time putting it into things like spaghetti sauce; it'd be overwhelmed.
