Jackie Chan's style of kung fu was Choy Lay Fut.
Choy Lay Fut is a style that incorporates 'acrobatic' skills and 'La Pakour' or Fast Running escape methods.
So Jackie Chan doing flips and stepping back and forth from wall to tree climbing it at the same time is standard practice in some styles of kung fu like Choy Lay Fut.

There's this one scene in Mr. Canton and Lady Rose(a.k.a. Miracles) where a couple of gang members wanted to test his fighting skills before they would acknowledge him as the new Big Brother (or Godfather). He performs a sweep and a couple of acrobatic kicks in a row against the gang members that deserves countless rewinds to fully appreciate.
