Written Hildebrand it is likely to be Dutch, mainly found in our
easterly provinces, Hildebrandt is a more German Variety.
It is a very old name , a late medieval Dutch writer/poet bears
that name.
Its origins must be old enough to predate modern Dutch and
German and might well be proto - Germanic.

I would say Swiss or German depending upon the individual.

I knew a kid in 6th grade named Kenny Hildebrand who told me once that his ancestry was Swiss and Norwegian.

The internet mentions a Swiss sculptor named Adolf Von Hildebrand (1847 - 1921) as well as a Philipp Hildebrand, the new vice-president of the Swiss National Bank .

Swiss German is a dialect of High German like Alsatian, Luxembourgish and Bavarian.
