I bought a few hundred jalepenos for a few bucks on a whim. Now I am wondering what do with them. Any suggestions?

JALAPENO JELLY

INGREDIENTS
1 large green bell pepper
12 jalapeno peppers
1 1/2 cups apple cider vinegar
1 pinch salt
4 1/4 cups granulated sugar
4 ounces liquid pectin
4 jalapeno peppers, seeded and finely chopped
DIRECTIONS
Combine the green bell pepper and 12 jalapeno peppers in the container of a food processor or blender. Process until finely chopped. This can be done in batches, if the peppers do not fit.
Transfer the peppers to a large saucepan, and stir in the cider vinegar. Bring to a boil, and let simmer for 15 to 20 minutes. Strain the mixture through at least 2 layers of cheesecloth, and discard pulp. You should have about 1 cup of liquid.
Return the liquid to the saucepan, and stir in the salt and sugar until dissolved. Bring to a boil over medium-high heat. When the mixture comes to a rolling boil (one that cannot be stirred down), boil for one minute, then stir in the liquid pectin.
Stir in the remaining jalapeno peppers, and ladle into sterile jars leaving 1/4 inch headspace. Seal jars in a hot water bath. Refrigerate jelly after seal is broken.

Serving suggestion:

Place a block of cream cheese on a plate and cover with a jelly. Serve with hearty crackers as a spread.

INGREDIENTS 12 ounces cream cheese, softened 1 (8 ounce) package shredded Cheddar cheese 1 tablespoon bacon bits 12 ounces jalapeno peppers, seeded and halved 1 cup milk 1 cup all-purpose flour 1 cup dry bread crumbs 2 quarts oil for frying DIRECTIONS In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves. Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes. Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated. In a medium skillet, heat the oil to 365 degrees F ( 180 degrees C). Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.

I like the jalapeno jelly idea. If you haven't had jalapeno jelly you don't know what your missing. I also love jalapeno poppers. There easy and delicious. Steam your peppers for 10 minutes. After they cool, cut a slit down one side and
use a small spoon to carefully scrape out the seeds and veins. Next, fill the
pepper with cheese, roll in milk, then into flour, then into egg/water bath,
then into seasoned bread crumbs. Deep-fat fry until golden brown (about 30 to
60 seconds). Yum!!

After I made some salsa, some pico, and some beans and cornbread w/alot of that, I would get some plain vinegar and can them.
You just pack the peppers in your jar, boil the vinager and pour over the peppers. Seal w/a heated rim and lid and you have preserved your peppers. Slice them and do the same and you have jalapeno rings.

Be VERY careful in handling them regardless of what type of preparation you do. Use dishwashing gloves as these peppers can burn your skin. Wash your hands and arms well even if you do use gloves, before you touch your face, eyes, etc.

Pickled Jalapenos (cut tops of peppers off, leave seeds in, put in enough white vinegar to cover in a large lidded jar. Put in fridge--this is a good way of preserving them for future use)

Jalapeno Relish

Freezing some of them will soften them and they can later be processed to a pulp to be used in relish or soups and stews--omelets, salsa, Mexican and Texmex dishes.

*********JALAPENO CHEESE BREAD

2 1/2 teaspoons yeast
3 cups bread flour
1/2 teaspoon salt
1 tablespoon sugar
2 tablespoons butter
1 cup milk
1 cup grated Monterey Jack, Cheddar, or Parmesan
1 tablespoon fresh chopped or dry minced onion
2 tablespoons jalapeno pepper, seeded and finely chopped

Process in bread machine on dough cycle. When dough cycle completes, remove dough from machine and roll out thinly on a lightly floured surface to make a rectangle.
Sprinkle with grated cheese, onion, and jalapeno pepper. Roll up jelly-roll style, place in a greased and floured loaf pan and bake at 350F degrees, about 45 minutes or until crust is golden and bottom of loaf sounds hollow when tapped.

Lol, you make a lot of soup. Or you have a jalapenos eating contest. lol. At a party of my girlfriends, my borther and his friends got jalapenos and filled them with cake and chips and stuff and ate it to see who can last the longest wothout giving up. lol it was gross

you can pickle them. .. vinegar, bay leave, onion, garlic, salt add some veggies like carrots and cauliflower. Or make fresh salsa and you can freeze that or jar it! I like jalapenos but that is a lot so GOOD LUCK!

I slice them up and wrap them in Croissant dough, like pigs in a blanket.

You can roast them and pickle them or you can simply freeze them for use later. Chopped or not.
