How long does fresh ginger stay fresh

According to Rachel Ray, it will stay fresh indefinitetly if you stick in the freezer. I chop mine (because I either put it in my juicer or use small quantities in my Chinese dishes) so I don't have to thaw the entire root when I want to use it. I just store it in a plastic baggie.

I've had fresh ginger in my fridge for way longer than 2 weeks.
I'm not sure I've ever had an that went bad.

I keep it wrapped in a plastic bag in the veggie bin and it stays fresh about two weeks.
To 'peel' just scrape it with a spoon!

keep it in the frig in the crisper drawer and it should stay good for about 2 weeks. you should get a small enough piece that you'll know will be used up within 2 weeks.

Yes,much better.Fresh foods are always better than frozen,dried,canned,etc.
