Fun! Here's a couple ideas:

1) Have the children compete in coming up with ideas for "going green" in their own lives. Give prizes for coming up with innovative ideas. (blog post on how one mom led this discussion with her kids: http://www.handipoints.com/mommypoints/?p=68)
2) "Green" craft activities, such as:
- Making new paper from recycled paper: http://www.dnr.state.wi.us/org/caer/ce/eek/cool/paper.htm
- Making natural dyes: http://www.dnr.state.wi.us/org/caer/ce/eek/cool/Ameliadyes.htm
- Make Tin Can Herb Pots (or flower pots, etc.): http://crafts.kaboose.com/earth-tin-can-herb-pots.html
3) Find a group in your area who will lead children's groups in cleaning up a local beach or park. (This might be a little much for 11 year olds.)

Make photo totebags, or decorate some kind of reusable tote/iron ons for shopping. They are all the rage now, with that big marketed one for Whole Foods.
