What are the difference between coarse aggregates coming from processing plants and coarse aggregates obtained under water on rivers?

I agree with the above answerer.

When I order a certain size aggregate from the local landscape materials company, I expect a uniform size, color, set of shapes, etc. If I order the same thing a year later (to add more landscaping), I can expect it to match very closely to what I had a year ago.

If it was river rock dredgings, I would have to accept whatever they dredged up at the time, which may or may not be the same as before.

Coarse aggregates coming from a processing plant is likely to be more uniform in terms of size. This is because they are prepared through a particular sieve however, the obtained coarse aggregate are most likely to be mixture of various sizes.
