I'm not one to brag, (really!) but I make some really awesome cookies. They always turn out just so and they are delicious! Except the past few (3+) batches I've made over the course of the summer. They are flat, crumbly, stick to the pans and for some reason unknown to me... salty. They are all different recipes, all that I've tried and done well with before, but they are not turning out at all! I haven't used different ingredients, no outrageous amounts of salt, use the same pans, oven.... what's going on and how do I fix it?

could you have changed to salt you buy, maybe it is crushed smaller. Just shorten up on the salt. I guess it could be the salt content that is drying things up. Try all new/fresh products if it still happens.......see if you are taking your meds right (smile just kiddin)

Have you changed the type of "fat" that you are using. Such as maragrine to butter? Crisco to margarine? And the extra salt, if you are using butter, are you getting the salt-free, sweet cream butter? This sounds like a problem with the type of fat. Or, the only other possibility that I can think of is the amounts of sugar - white to brown ratio. have you changed that or changed the brand of "sugars" that you are using. The type of sugar most times will determine the "loft" of the cookie;, the more brown sugar, will make a flatter cookie. I would look at the ingredients you are using and make sure that the brand hasn't changed, the amount of sugars you are using hasn't changed. The only other thing - maybe the manufacturing process of the ingredients, but I wouldn't think so. You are going to have to be a dective, and really look at what ingredients you are using and how you use them. Something in that process has changed.
Good luck, and there is nothing like making a receipe for years, then have it go all wrong on ya. Frustrating. Detective time!!!

Are you using salted butter for a change? I always use the un-salted variety.
Have you checked the temperature of your oven? It could be off (sounds like it might be running hot).
Are you using self-rising flour instead of the all purpose kind? Self-rising flour also has salt in it.
And...........where are you getting these new recipes from? Are they tested recipes? Or from one of those websites where people submit their own recipes?

check the freshness of the ingredients you are using.
Is the flour stale, change brands.
Is the baking soda/powder outdated?
are you letting the cookies chill for a bit since its so hot outside?

It's probably the humidity. Have you changed your air conditioner, central air, or stopped using it. Or have you moved. It might be the altitude. You may also have a bad batch of salt. Perhaps too much iodine was mixed in.

Try buying new flour. I find that sometimes it seems to go stale or something and isn't good for much of anything.

its probably the weather ,humidity etc,,,and the product may have changed try a different butter ,,,thats all i can think of :) that may be the problem.
