Everyone has their secret weapon in making the perfect meatloaf, as do I. Some people use bacon, others soak a piece of bread in milk or cream and add that to the mixture etc etc.
What's your recipe to this simple but delicious comfort food?

Some pretty good ones so far!
I've tried several types of binders in mine also. I've even added peas to the mix! Looks neat when you cut it and present it on your plate also.
I've done the pizza meatloaf too, only I place little pieces of mozzarella cheese, pepperoni, mushrooms, onions, and green peppers throughout the mixture. Topped with a pizza type sauce.
Keep em' comin', I'm gettin' hungry now!

Mine's the "roll" method in which I roll the meat mixture out to a thin sheet then spread a layer of tomato sauce, or onions or spinach and cheese over the surface than roll it up like a jellyroll and bake it. Everyone loves it.

I am very partial to my meatloaf. If you haven't had it you need to try it. Here is the recipe. Take 18 oz can of tomato sauce and one cut up onion (chopped) and a garlic clove (chopped). Mix it all together and then simmer for about 2 minutes. Take your hamburger (11/2-2lbs), one egg, 1 cup of breadcumbs and 1/2 of the tomato sauce mixture; mix well. Shape into a loaf in a shallow roasting pan. Top the meatloaf with the other 1/2 of the tomato mix and then lay 4 pieces of bacon on top of the loaf. Bake for 30 minutes and then check it and flip the bacon. Bake for another 30 minutes and then you are ready to go. Bake temp. is 375-400 degrees..depending on your oven. I make a Turkey/Ground Beef Meat loaf...
1/2 Pound ground Turkey
1/2 Pound ground Beef
1 Cup crushed Triscuit Crackers
chopped onion
2 eggs
Crushed garlic
1 cup Barbucue Sauce
some parsley or Oregeno
Smash it all together then put in a pan and put more Barbucue sauce on top and bake for 1 hour at 350 degrees..yeah BABY!

Ive tried a couple of boiled eggs placed right in the mixture after you've made the loaf, My husband was the one that came up with it and he likes it that way, I personally use a few eggs, bread crumbs, ketchup, diced green peppers, diced onion, and Lipton french onion soup mix, S&P, alittle Italian seasoning spice and mix well and shape, then put either tomatoe sauce on top and bake or brown gravy on top and bake depending on my mood.

Couple dashes of Worcestershire sauce.
Also try making a pizza meatloaf. Prepare your ground beef and sausage mixture with breadcrumbs and some Italian seasonings and pat into a rectangle, spread to about 1 inch of the sides your favorite pizza sauce and put some shredded mozzarella on that, roll it up and put into your load pan. You can add more sauce and cheese on top while it cooks.

Use barbecue sauce and then coat the top with barbecue and sprinkle on garlic powder, salt and pepper. I put green peppers, onions, egg, bread crumbs, lots and lots of spices, like chili powder, garlic powder, all the Italian spices, lots of fresh sage, worchestshire sauce, and a little bit of milk. My family says it's the best they ever had and actually crave it, sometimes they imagine they can smell it cooking, when it's not!

Free-form loafs - never in a loaf pan. Then baste with spicy and smoky red sauce (secret recipe) the whole time it cooks. Oh, and a little oatmeal in the meat mix. Very tasty. Had it last night actually.

This one is quite different, you don't use oatmeal, crackers, breadcrumbs or any of the typical binders in this one, and I think it's very easy and quite deliciousl.........You can really use any flavor of Stove Top Stuffing mix.......all the spices are already premeasured, so it simplifies the mixing process tenfold......
2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided
PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the barbecue sauce.
SHAPE meat mixture into oval loaf in 13x9-inch baking dish; top with remaining 1/4 cup barbecue sauce.
BAKE 1 hour or until cooked through (160ºF).
Give it a shot......BTW, this is from Kraft Foods website, they send me great food ideas in my email every week.......Enjoy!!

Lean ground beef
1 pkg onion soup mix
2 eggs
1/4 cup of rolled oats or bread crumbs
mix together bake in a loaf pan just like you'd bake your's.

Sautee my onion and pepper in olivie oil, salt and pepper until tender, but not brown. Then add 1/2 c. worschestire (sp) sauce and let it reduce by half. Let it cool and add to my mixture. Also, I like to make smaller meatloafs so they don't need to cook as long.
