I like sharp cheddar, but my real favoite is feta, the real kind like the greeks make with some greek meatballs. My first wife was greek so I got used to that kind of cooking. She was a great cook and I loved all of her great greek recipes.

Theres an Irish company (Dubliner) that makes this incredible cheddar that seems to be the love child of a good parmesan and a sharp cheddar. Whenever I break out a brick of that stuff for company, the whole thing goes.

I like extra sharp cheddar. Mozzarella is great in lasagne and parmesan goes on my pasta, regardless of the sauce.

I love cheese. It's really hard to pick a favorite.
I like "Stella" blue
I enjoy a nice smoked Gouda.
It's hard to beat a baked Bree at a party
Basic aged Cheddar is the best all purpose cheese IMHO.
Co-jack makes a great grilled cheese sandwich.
I guess we can all see where that little cholesterol problem comes from... ;)

I love cheeses of all sorts, as you said, depending on what you're eating. My over-all favorite cheese is Cheddar, I like it with fruit, on crackers, with macaroni, plain to snack on. And yes, I love parmesan as well.

Of course I like cheese i'm italian.
I like mozzarella, lugadel (on spaghetti), and basically every other cheese. Oh yea, and blue cheese is awsome.
