The biggest difference between processed aggregate and bank run aggregate is going to be the shape of the particles. The processed material will be much more angular, while the bank run material will be more rounded (from the constant abrasion of the water.

The angular material is going to be better in earthwork applications (such as a base course) because the flat, angular particles will compact tighter and more easily than round particles.
