To determine the sorting. If most of the aggregate is the same size it is well sorted, but for construction uses it will be very weak. It would be like marbles that were all the same size. Some times this is desired for cement work because cement is stronger than the aggregate so you want a mix with a lot of voids in the aggregate that will fill with cement. For earthwork you want a product that has a blend of large, medium and small size because the smaller fraction fills in the voids between the larger sizes. The project engineer usually has a spec requiring a certain gradation of sizes.
