Nobody mentioned Dr. John. He plays New Orleans style jazz and Blues. He also plays some boogie woogie stuff. For some rock, go all the way back to Jerry Lee Lewis, Fats Domino, and Little Richard. Diana Krall is a more current Jazz pianist. I don't like all her stuff but she is very good and worth a listen.

Get some Jimmy Smith CD's.

They will be classified as jazz, but he played a lot of blues. I think there's videos of him on youtube (below).

About a minute or so in, you see him adjust the organ and just HIT IT..... man, that's good.

Gregg Allman plays a mean organ (blues influenced southern rock). Santana had lots of organ in his classics too.

Well - along the lines of more Jazz and Rock, you could go with Keith Emerson from ELP or Rick Wakemen from Yes.

For more blues/rock - some of the stuff by John Paul Jones from Led Zeppelin is good. Check out his organ work on "Your Time is Gonna Come" or "Since I've Been Loving You"

Check out "Lee Michaels Live". Recorded live in the studio with just a drummer and a Hammond B-3, this album contains one of the best versions of T-Bone Walker's "Stormy Monday Blues" ever recorded.

Reese Wynans's work with Stevie Ray Vaughn is killer. Lots of B3, lots of just great piano playing. Check out the "Live Alive" album. Dude is scary good.
