Last year cooler nights stopped the figs from ripening. Is there a good use for green ones. I have a recipe or two, but I am not sure they'll be worth it. Do you have a recipe you have used? What were they like? Crunchy? Sweet? Tart? Etc.

Below is the only recipe I have found (I can't authenticate it!!!) I am extending the deadline in the hope that others may reply.

SPICED GREEN figs
• 6 pnds small whole green figs
• 9 cps sugar
• 1 pint cider vinegar (5%)
• 2 sticks cinnamon
• 1 tblspn whole cloves
• 1 tblspn whole allspice
• 1 tblspn whole mace or ½ tablespoon ground mace
Yield: About 4 1-pint jars.
Procedure: You may use small green fig for this pickle. Wash, scald, and peel. Make a syrup out of the sugar, vinegar and spices. Drop in the whole figs and boil them until they become clear.
Pack the figs into hot jars, leaving ½-inch of headspace. Strain out the syrup and cover figs with the syrup, again leaving ½-inch of headspace. Remove the air bubbles and adjust headspace if needed. Wipe rims of jars off with a dampened clean paper towel; adjust two-piece metal canning lids.

knowing what bugs do to fertilise figs, I would not touch them with a barge pole

I'm a fig person and this year a late freeze just set my tree way back and I only have a few small figs on the tree. Green ones are just awful to eat so I have no idea what you could do with those. Maybe you could try to make preserves and put in extra sugar, I've never tried that but I do make preserves every year, well not this year. Put your recipe up if you get one or email it to me if you wouldn't mind.
