The "Roman Collar" or the white band worn around the neck by Catholic priests is a sign of obedience.

The black robe or "cassock" symbolizes their vow of poverty. Black is also the color of death - the priest must "die to himself" and rise to live for the Lord.

Veritas' answer is great. But it's not just priests that wear them. They're worn outside of the Catholic church also by, reverends, pastors, etc.

I am not sure, but they originated the term "ring around the colar"... Dirty, dirty priests.

I thought they wore them cause they are kind of like dog collars? like, dogs wear collars as a sign that they are a 'servant' and belong to their owner, like a priest is a 'servant' and belongs to god?
