I saw a video online that was taken in a "Kosher" cattle slaughterhouse.
Now, don't quote me on this, but I think I remember the video saying that Kosher meat cannot still be half alive when it is slaughtered; so the bolt in the head would not fly with this procedure. (They want the animal to feel the least amount of pain possible.)
That step is skipped and their throats are slit. They still feel it. The one cow fell down and flailed around in puddles of its own spewing blood. It was gut and heart wrenching! I cried. It was horrible to see an animal suffer like that.
Not all Kosher slaughterhouses run like that, but if this topic concerns you, do some research to find out which ones are truly Kosher.

From what I have heard is that they stun the cow using a bolt that does not enter the skull, but rather knocks the cow or bull out. Then a trained butcher slices the throat, depending on the thickness of the skull the cow or bull might now awaken from the strike, but for the must part it is the cutting of the neck that will kill the cow or bull.
