I really think that the predominace of English religious books are published in moder English. Sure, you can find some old books that are even still in print.
I think most non-muslim people believe that it is required for spouses to convert. I don't know the details myself though, ask your "man" if it's a requirement.

There are about 3 gazillion denominations of Christianity because of the different translations of the Bible (the most recent translation that is). If anyone dared to re-translate the Bible into current dialect, no one could agree on what the verses mean in everyday English. As for your second question, religious people can feel insecure about their faith deep down because they know that it's all unjustified and if you're not drinking the same flavor of koolaid, it's a problem.

It is expected in muslims societies that if a muslim man marries a non-muslim woman, then he must convert her to Islam.
Clearly your man is not attempting such a thing, which I point out is against his religion.
Old English seems to sound more mystifying and religions love that sort of mesmerism that hypnotizes people.
In the case of the Bible it is reflecting of the popularity of the King James Version of the Bible, dated but much loved. However there are modern English versions of the Bible available though much less popular.

I am not sure which books you are referring to because I have read many that are in modern English. As far as you not being of a faith and your partner being Muslim, I guess people expect you to be Muslim because of the importance in the Muslim religion of marrying someone of their faith.

There is a Scripture that says do not marry outside the lord. Be careful you maybe setting yourself up for a lot of problems
