Here’s a few suggestions using veggies [and a few other foods]:
Spinach salad - when I give recipes, I have a tendency to “go off on a tangent“. I give recipes for some of the ingredients. This is why I prefer not to give recipes. HOWEVER, use your imagination OR buy the prepared salad dressing.
Stuffed celery w/ cream cheese - or any cheese for that matter. Simply wrap the cheese around the celery OR if you’re eating cheese wedges, alternate between the two.
Hearts of lettuce with some of your favorite veggies.
Caesar salad (with the dressing on the side, until your ready for lunch)
When you go to the store, experiment with different veggies, greens and lettuces.
Chef’s salad w/ some of your favorite cold cuts and/or cheeses.
Waldorf salad - with apples, grapes, walnuts, celery and mayonnaise.
When I was a young man, we grew tomatoes. It was nothing to grab a ripe tomato from the vine, chill it for a couple hours, then eat it like an apple with salt and black pepper. You could do the same with store-bought tomatoes; tomatoes from a produce stand or farmer’s market. Depending on the size of the tomato and your appetite, that’s a really easy lunch - or snack, isn’t it?
Cucumber salad.
Stuffed tomato w/ your favorite mixed salad - shrimp, chicken, tuna, egg, etc.
Fruit salad - using fresh fruit, canned fruit or a combination.
Shredded Carrot and raisin salad.
Neptune salad - assorted seafood with mayonnaise.
Pasta salad

Soup in a thermos and a sandwich or crackers on the side

Fruit Bars such as Nutrigrain Bars
Macaroni Salad
Pasta Salad
Potato Salad
Baked Beans in a thermos
Fried Chicken wrapped in plastic wrap or in a plastic container to prevent grease from getting all over
Apple Slices with caramel dip or peanut butter on the side
Fruit Salad
Jello
Pudding
Taco Salad with sour cream or salsa on the side

If you enjoy cooking, then I'd recommend making a weekly menu for yourself on Saturday(s) and making some things ahead of time you can take for lunch, as well as enjoy for dinners. Here are some ideas:
1. Roasted chicken: Tortilla wraps with cheese
2. Cheese and olive salad on crackers
3. Pork Roast for sandwiches or sliced on salads
4. Lasagne: reheat in microwave
5. Muffalata sandwiches: they taste great the next day!
6. Soup: as it sits, the flavors will enhance
7. Salad rollups: sliced meats, cheese, or roasted veges
8. Tuna casserole
9. Chicken Pot Pies: both 8 and 9 are great reheated
10. Steamed veges (crisp tender) with aioli (garlic mayo)
11. Grilled eggplant panini's
12. Chopped salad with avocado and bacon
13. Chinese Chicken salad with cabbage instead of lettuce
14. Fresh fruit cubes with cream cheese dip

buy a salad container that you put salad in and has a small container to keep the dressing separate so you can add it later. then you can make a variety of different salads for lunches.
also try;
soft pretzels
bagel pizzas
microwave dinners
leftovers
soft tacos
taco salad
burritos
fajitas
fresh fruit with yogurt dip
soups
chili
baked potatoes(10 minutes in the microwave or reheat for 2 minutes) and toppings
tuna salad and crackers
cheese and crackers and fresh fruit
egg salad in a wrap
chicken wrap
cold chicken cut up, some veggies and a dip of your choice
veggies and dip
chips and salsa
bagels -mini or regular(also come in flavors like blueberry)
croissants and cheese

Get one of those salad shaker bottle containers. You store plain lettuce salad or spinach or anything leafy you like and then there is a small separate container for dressing. Once you're reading to eat it, you press the button to release the dressing and shake it. It mixes the salad nicely and you end up w/ a somewhat convenient (but healthy!) lunch.

why not form a club at school
gourmet lunch club. excahnge plans and ideas
In order to do this you need planning and equipment.
a soft-side thermal back-pak. that doubles for school stuff and sandwich containers several along with the large mouth stainless steal Thermos's 2 or 3.
Blue - ice and eating equment paper plates salt pepper condiments.

crock pot stews and soups ??
deserts any;;; fruit cocktails;; puddings;; Ice cream
you could roll a small steak with gravy heat in the oven a few min and seal it would stay hot overnight

you can also do hot dogs if you have a thermos and put hot water in the thermos to keep it warm, it works well and you don't get sick.
Also, anytime of salads, just keep the dressing seperate from other ingredients and the wet veggies like cucumber/tomato, etc in a baggie. Mix in a bowl when ready to eat!

vegie croissants are nice with cucumbers, tomatoes, lettuce / sprouts / cheese. pack your veggies seperate and then assemble it at lunch time. you can buy them buy the biscuit section and bake them fresh.
wraps - take a tortilla whole wheat or white and just wrap up chicken / tuna fish / turkey / lettuce / cheese - a little ranch dressing
salads / bring dressing on side. vary your lettuce for variety.
baby carrots and ranch dressing
fruit salads - all kinds of things you can make
sliced apples / cheddar cheese chunks
bagels - cream cheese spreads
soups / nice crusty roll
cottage cheese and canned peaches
