I have leftover food from a party this weekend. I 've got pulled pork, meatballs, and lots of veggies. I don't need to use all these things, I just need some sort of idea!

Here are a couple of recipes that are a little bit different and delicious!

Pork Quesadillas

/2 lb pulled pork
1/2 cup barbecue sauce
1/4 cup chopped fresh cilantro
5 green onions, minced
8 (6 inch) flour tortillas
1 cup shredded four-cheese Mexican blend cheese
2 tablespoons butter or margarine

Toppings

sour cream
sliced green onions
barbecue sauce


In a bowl, stir together the first 4 ingredients.

Spoon pork mixture evenly on half of each tortilla; sprinkle with cheese.

Fold tortillas in half; press gently to seal.

Spread butter on both sides of quesadillas.

Heat a large nonstick skillet (can use cast-iron) over medium heat; cook quesadillas 2-3 minutes on each side or until browned.

Cut quesadillas in half or in quarters; serve with additional toppings if desired.

Sweet-n-Sour Meatballs

1 (14-oz) can pineapple tidbits or chunks, undrained
1/4 cup brown sugar
2 tablespoons cornstarch
1/2 cup water
1/4 cup cider vinegar
1 teaspoon soy sauce (or more to taste)
1 family meal-sized portion of freezer meatballs
1 (5-oz) can water chestnuts, drained and thinly sliced
1 green pepper, cut in strips

Drain pineapple tidbits, reserving syrup. In medium saucepan, combine brown sugar and cornstarch. Blend in reserved syrup, water, cider vinegar and soy sauce. Cook and stir over low heat until thick and bubbly.

Carefully stir in meatballs, water chestnuts, green pepper strips and pineapple. Heat to boiling.

Serve over hot cooked rice.

Put some BBQ sauce on the pulled pork and make BBQ sandwiches with chips for lunch.Then take the meatballs and add some spaghetti sauce and cooked pasta with a green salad and rolls for dinner.The veggies you can wash them in hot water and then drain well.Now add some chopped tomatoes,fresh onions and bow tie pasta and make a huge pasta salad for whenever.Hope this helps,I do it a lot..Stretch the food without wasting money....

figure out what you can use tonite/tommorow; freeze everything else so its not wasted! I'd do spaghetti & meatballs with fresh veggies, and freeze the pulled pork for another, busier day ( you can put it in the fridge to thaw the night before, and it will be ready for the microwave when you get home from work) I'd also stick some veggies in ice water to snack on during the day

How about a meatball soup using some of your vegetables?

Maybe add can beef broth, water, can tomatoes, onion soup mix, carrots, celery, seasonings such as parsley, pepper, oregano, basil and a bay leaf. Bring to a boil. Reduce heat, cover, and simmer for 30 minutes. Add meatballs; cover and simmer soup 20 to 25 minutes longer. Sometimes I add elbow macaroni or left over macaroni and cheese.

an entire roasted poultry - even one offered on the industry - makes an impressive poultry salad, poultry soup, poultry enchilada, or poultry casserole the subsequent evening! Meatballs make large grinders (subs) here day! chilly, leftover cooked pasta could be made into pasta salad. Baked potatoes could be chunked up and made into an egg, veggie and cheese casserole. Grilled or broiled salmon is large here day in a salad or made into salmon truffles! crimson meat shoulder roast can become pulled crimson meat bbq sandwiches. Leftover steak could be steak sandwiches or sliced with a salad and blue cheese dressing.

Stir-fry the veggies with the pulled pork.
Serve over rice or Ramen noodles.

Save the meatballs for lunch tomorrow.

You could make pulled pork sandwiches and meatball subs.
