They certainly taste yummy, and I've tried all sorts of different recipes...and my baking powder is fresh, not stale.
I'm stumped!

The stores use an institutional form of triple acting baking powder......you can sometimes find it at Baking Supply Stores or Arts and Crafts (think Michael's) Stores......You might also want to check the date on your can of baking powder just to be sure......a good trick to make sure it's still good is to drop a 1/2 tsp of it into a 1/2 cup of vinegar......if it bubbles and foams, your baking powder is fresh.......Enjoy!!

have you varied the time??
your stove may be too hot
the amount of measures may off.
I have (well had) one I/2 teaspoon that was the same as a full teaspoon or was it the other was around???
Try this stick to the recipe
but let the muffins set a while before puting in
let the batter warm up

The ones the store makes have all kinds of preservatives and extra stuff in them to make them look better so more people will buy them.
The ones you make are better for you and are "real" muffins.
Maybe you could put a tad more baking powder in them. Or use bread flour which is lighter.

1. don't stir to much the batter should be lumpy
2. fill the muffin cups all the way full instead of 3/4 full you will get bigger muffins but not as many.(for example you will get 8 instead of 12)

The batter for muffins should be a little lumpy and thick. It shouldn't be like cake batter. Did you over stir your batter?

Your muffin pans aren't as big as they use, and you probably use less batter in each cup.
