I know that the kosher laws state that only fish with scales should be eaten, but there are usually health reasons for involved and I was wondering if anyone knows why shellfish is prohibited.

I'm not Jewish, but I've really pondered on the meanings of kosher and halal (Islamic form of kosher), and from what I understand and what I've put together, kosher and halal laws require that animals be slaughtered before using them for consumption. Halal permits shellfish, but I think the reason it is forbidden in Jewish law is because it cannot be properly slaughtered. The two ways of preparing shellfish (crab for example) is by ripping it apart alive, or boiling it alive. Either way the animal suffers, and allowing an animal to suffer is forbidden in Islam, as I believe it is also for Judaism.

In addition, shellfish and scale-less fish like catfish are bottom-feeders. They eat whatever falls to the bottom of the ocean/river, be it poo, carcasses and whatnot. Cleanliness is a big deal in Judaism and Islam, and certain animals are forbidden because of what they eat (pigs for example, as well as other carnivorous animals).

I don't have any direct links or Judaic teachings to support my theory, but it makes alot of sense to me ;-P

There are NO health reasons at all given in the torah as to why we can or why we can't eat certain things. G-d say no to shellfish, then it's no to shellfish. People who haven't actually read the food allowances and restrictions always say we can't eat pork and shellfish because of cleanliness or health reasons.

It was prohibited primarily for ceremonial reasons.

But yes, health issues appear to play a part in determining what was clean and unclean.

Shellfish would fall into the category of scavengers.

There is however no condemnation for eating such, spiritually.

Health is another issue. It probably would not be a good idea to eat such.
