She is not comfortable making any of the recipes I have offered. I am 57 and rarely use a recipe. You know, a pinch of this, add this ingredient until it is this consistancy. She said I am making her crazy. I say she should have watched me closer. This is an important dinner, and she is not concerned with the cost, just simplicity. Please only tried and true recipes!

I am sorry. I should have indicated that this is informal. It just happens to be for friends of her fiance that she has not met. She is wanting to make a good impression. I again mention, I am 57. I told her if you blow them away, you will be married to the kitchen!

I am extending this because of the wonderful recipes that you all have been kind enough to share. I have had emails actually asking me to leave this question open! I will probably have to put this one to a vote, which I have never done purposely. I did let one get away from me when I was offline for a few days. Thank you all!

This is delicious and SOOO easy

BAVARIAN BEEF BURGUNDY

1 lb. beef sirloin, cut into thin strips (or Tenderloin Tips)
2 tbsp. butter
1 c. mushrooms, sliced
1/2 c. onion, chopped
1 pkg. Kraft brown gravy mix
1 pkg. Kraft sour cream sauce mix
1 1/2 c. water
1/4 c. Burgundy wine
1/4 tsp. dill weed

Brown meat in butter. Add mushrooms and onion, cook 5 minutes. Blend in remaining ingredients, stirring until thickened. Serve over noodles.

Meatloaf

1 1/2 pounds fresh ground beef (hamburger)
1 cup crushed saltines
2 eggs (well beaten)
1/2 cup of ketchup
Tbsp. parsley
tsp salt
tsp pepper
1 envelope onion soup mix

Mix all ingrediens together with hands then form into a loaf shape, place on a baking pan-shallow, but make sure it has room for the juices to not spill out into the oven.
Bake at 350 degrees for 1 hour and 10 minutes. It is done when it shrinks up a little, and a meat thermometer placed in the middle reads 160 degrees (it is no longer pink in the middle). Cut into slices and enjoy!!

I think it depends on the theme and or the mood. If it is casual, and she wants something she can do ahead. Make a center table full of fajitas.
Cut up all the ingredients ahead of time. Everything from onion, too green pepper, hot peppers, lettuce, tomatoes, etc.
Get a nice serving tray and put it in the center of the table. Then all she needs to do is add the seasoned meat and tortillas later..They can help themselves and don't need to have anything on their plate or in their food that they don't like, yet they are all still sitting at the table.
Add an easy rice dish for on the side.

The World's Easiest Roast and Gravy

1 3-4 pound roast, frozen
1 envelope Lipton Onion Soup Mix
Worchestershire sauce

Place the frozen roast in the middle of a square of heavy-duty aluminum foil. (Yes, you read that correctly -- that sucker should be frozen solid as a rock.) Sprinkle with the soup mix, and add six or seven good shakes of Worchestershire sauce.

Fold the foil up to form a tight package. Place in the oven, turn to 250 degrees, and go do something important for the next 5 or 6 hours. (Organizing the junk drawer or medicine cabinet comes to mind, because you *know* someone's going to look into them.)

That's it -- that's all there is to it. When the roast starts to smell good, open the foil carefully and check the doneness. There will be plenty of delicious liquid which will only need a little cornstarch or flour paste to thicken.

To go with this, I'd make things easy on myself and buy some Bob Evans mashed potatoes, throw away the box, and heat 'em up in a pretty dish. Serve with a fancy-schmancy salad or two from the deli, some hot rolls, and a Pepperidge Farm cake.

If they don't like that meal, they aren't worthy of your daughter!

Last recipe somebody had posted already.
Try this one it is a little bit more complicated but so worth it!
2 tablespoons extra-virgin olive oil
1 pound ground
1 green bell pepper, seeded and chopped
1 small onion, chopped
5 large garlic cloves, chopped
1 medium portobello mushroom cap, finely chopped
1/8 teaspoon allspice
1/2 teaspoon crushed red pepper flakes
Coarse salt and black pepper
1/2 cup red wine
3/4 cup beef stock
1 tablespoon Worcestershire sauce
1 14-ounce can crushed tomatoes
1/4 cup flat-leaf parsley, chopped
4 tablespoons (1/2 stick) unsalted butter, softened
5-8 fresh basil leaves, about 1/4 cup, chopped
1/4 cup grated Romano cheese
4 hoagie rolls
4 slices mozzelrela cheese.

For the meat sauce, heat a deep skillet medium-high heat with 2 tablespoons which olive oil. Add the ground beef and cook until lightly browned, breaking up the meat.
Add green pepper, onion, 3/4 of the garlic, mushrooms, allspice, red pepper flakes and a little salt and pepper to the beef and cook for about 5-8 minutes.

Add the wine and cook another minute then add the beef stock, Worcestershie and tomatoes. Bring the mixture up to a bubble, reduce the heat to medium-low and gently simmer for 10 minutes until most of the liquid has boiled off. Finish it by stirring in chopped parsley.

While the meat is simmering, combine the remaining garlic with the soft butter, basil, parmesan cheese and a little salt and pepper in a mixing bowl. Split the rolls in half lengthwise . Press open the rolls by flattening them out a little bit. Slather the insides with the butter and place 2 slices of the mozzarella on each roll. Toast until golden brown under the broiler, about 2-3 minutes.
Top one side of the cheesy garlic rolls with a heap of meat.

This is super easy and oh-so-good! Oven fried chicken.
Combine:
1 cup crushed rice krispie cereal
1/4 cup grated Parmesan cheese
1/4 cup chopped almonds
2 tablespoons minced parsley
1 teaspoon salt (optional)
1/4 teaspoon thyme
1/8 teaspoon pepper
(I make a double batch of the above ingredients and freeze half for later use.)
1/2 cup butter
1/2 clove garlic, minced
2 1/2 to 3 pounds chicken pieces (I use drumsticks)
***Melt the butter and garlic. Dip the chicken pieces in butter, then in crumb mixture. Place in a baking dish and cook at 375 degrees for 1 1/2 hours or until no longer pink.
Very tasty!!
Here's an added bonus! Easy Cherry Cobbler
1 stick butter, melted
2 cans pie filling (your choice)
1 box yellow cake mix

In a greased casserole dish, spread the pie filling evenly. Sprinkle cake mix evenly over pie filling. Drizzle the butter over cake mix. Bake 1 hour or until starts turning a golden brown. Serve warm with vanilla ice cream.

Is it a formal dinner or a gathering of friends? For a formal meal I would get a lamb roast, 1/2 lb per person. Rub the roast with Rosemary, Garlic, Sage and a little vegetable oil. Cook at 375 till the internal temp reaches between 145 for medium rare to150 degrees medium. 165 degrees will be well done but you ruin the texture of the meat cooking it that much. Remove from the oven, wrap in foil and let the meat rest for about 25 minutes before slicing. Serve with oven roasted red potatoes and whatever steamed veg you like.

Sounds like your daughter's fiance isn't marrying her for her kitchen skills - perhaps, if she's really interested in making a great impression, and is nervous about it, cooking a new dish might not be a good idea. Simplest thing is to buy the food, from the deli, a restaurant, a caterer, make a nice salad, pick a good wine or beer, and not let the food be one of her worries.

Nearly every Sunday night here I invite my neighbours and their child over for dinner. Usually I get a leg of lamb or a pork shoulder with the skin intact for crackling and bake it. This means that a few hours before dinner time, I put it in the oven and then open a bottle of wine which my wife and I share. About an hour before the meat is ready we peel some potatoes, carrots, pumpkin, chokoes and onions and toss those into the oven and open another bottle of wine... usually our neighbours arrive round about then and open a bottle of wine... then when the meat is done and resting for 15 minutes, my wife makes some instant gravy, the kids set the table, I steam some broccoli and my neighbours open another bottle of wine and top up our glasses.

You just cannot beat this style of dinner for 10 people and it is so relaxing that it sort of does cook itself.

I don't need to tell you how to bake a roast leg of lamb do I?

My granny had a kind of a soup that looked as a chunky soup or a stew... A traditional meal that has great flavor but very simple to make... Granny's Sagamite

You need game meat, a little piece (about 4 ounces) of each (elk, deer, moose and/or buffalo and Turkey)... First, cut into cubes all the meat and, with Turkey aside, you rissole (cook in a pan with oil till lightly dored) in a frying pan and at end, toss in the Turkey pieces and turn vigourously...

Prepare a cauldron , and, after emptyed the fat of the meat elsewhere, put the meat in with water and start the boiling, prepare shallots and add them to the mix and season with black pepper and salt lightly (so the guests can season more to their taste)...

Now you need these ingredients...

2 green peppers and 2 red peppers diced.
2 Zucchinis, diced.
1 cup of finely sliced mushrooms.
4 sliced garlic.
4 cups of corn in grain.

When the boiling meat is beginning to tenderise, add first the garlic and the peppers and the next 15 minutes after, add the mushrooms, Zucchinis and corn. Do not have water level more than about 1/2 inch over the mix... Add some if you must...

When it is cooked, prepare 1 table spoon of corn starch and mix with cold water to make it very liquid. Add to that mix a bit of soya sauce and add it to the stew... It is ready once the broth has ticken... You may serve that stew with tomato rice or butter cooked potatoes with parsley...

Mmmmmmmmmh!
