Just as you would cook roast beef normally! slice the beef for sandwich. there are some roast beef recipes on this link. hope this helps.

Get a nice Beef roast. shoulder would work fine. Mix up 2 tablespoons salt,pepper.dried Thyme.
Rub this all over the roast and place in a cast iron dutch oven.
Sear on medium high on all sides until nicely browned.
Add your favorite liquid. Beer,wine,water whatever you like. About 1 cup. Cover
Bake at 250 until the internal temp is 130 for rare.(recommended)
140 for medium
Let cool for 5Min's with the lid off to redistribute the juices and slice very thinly

ROAST BEEF SANDWICH

3 lb. roast
1 c. catsup
1 1/2 tbsp. Worcestershire sauce
1 tbsp. vinegar
1 tbsp. brown sugar
Salt & pepper
1 c. meat stock (from roast)

Bake roast at 250 degrees for three hours. Then at 300 degrees for two hours or until well done. Add water to roast while baking. Cool when done. Then simmer catsup, meat stock from roast, Worcestershire sauce, vinegar, brown sugar and salt and pepper as desired. Shred roast by hand. Warm with catsup mixture. Spread on buns.

Pick out beef roast of your choice . . . I usually use Rump Roast. Place in crock pot . . . mix together a can of Golden Mushroom soup and a can of condensed beef broth, pour over top. Cook on low for approximately 8 hours. You can then either shred the beef or pull it out and slice it. The soup beef broth mixture makes a nice au jus for dipping.

Alton Brown has a great method of starting the beef in a hot oven then turning it down. The end result is that the outside is well done, the middle is medium rare and there are varying donenesses for all tastes. Check out his recipes on www.foodnetwork.com under his show GoodEats. If your guests like their meat well done and dried out, give them slimjims, and keep the $8 a pound stuff for the ones with tastebuds!!

wash meat-dry season salt & pepper then flour it then put it in hot oil to brown
then put it oven 300 with beef broth cook till fork tender
take out let cool
then slice then the gravy you made while you baked the meat check the seasoning taste it add abit more seasoning if you desire like accent or msg little browning if the gravy is not thick enough add little corn starch
put it over toast & beef cut in half like a sandwich mash potato in middle and spoon the gravy over all and serve

You take a joint of beef - you cook it in the oven - the lower the heat and the longer you cook it th more tender it will be. Then you let it cool. Then you cut it into thin slices with a sharp carving knife.

Season well with Worcestershire, Salt, Pepper, Cavender's Greek Seasoning.
Wrap tight in aluminum foil so juices don't get out.
roast in low oven for 3-4 hours.

I bake it in the oven,350 for 25 minutes per pounds, and slice it really thin.

The main thing is to let in cool right down, preferably overnight so that you can carve it thinly.
