as you no doubt already found out, it works just fine. the TV you are using isn't a stereo tv, and isn't equipped to work with two speakers, so it only uses one audio channel (the white)
what you could do is turn on the ps2 with no cables attached to the TV, and then attach one at a time, to see that the white is sound, and the yellow is video - it's kinda neat

Yes. The yellow is always for video. The red and white are always for audio, but you don't always need both. I never use my red because it is bent up (and it use to cause me to hear my PS2 when I changed to channels on my VCR). You only need both we you are using them as left and right audio like with speakers and such.

White and red cord are for Stereo output, as in 2 channels, hence the two colors. If you have only one of the channels (white) plugged in, then you will have only Mono (1 channel) audio output, but it still works.

the yellow is for the pictures only, the red and white are for stereo sound, so its not required and will work fine.
for a games the sound is not always in stereo (two speakers).

you dont need the red socket, many tvs are like yours and work fine. i have a red socket but i didn't bother to plug my ps2 into it.

How did you hook it up? I used to have a type of TVs, and it didnt have enter jacks on the back... in case you have AV in/out on the back of the television, then it has to have yet another channel placing... attempt channel a million? Whats the type huge type on your television? there is no television/AV button on the distant? weird and wonderful....
