My wife is wheat intolerant. Some recipes state using Maize Flour and some state use Cornflour. Are these the same thing ?

maize flour is the same as cornflour, you can also buy rice flour which is much nice. and for that person who said cornflour is made from wheat i think not otherwise i wouldn't be able to use i as i can't eat wheat.

Maize flour is usually corn meal. I can tell this from the spanish translation on the packets: harina de maíz.

Cornflour in the UK is cornstarch, which, I believe, is extracted or something like that. It makes a scummy mess of your food and only people who don't know how to cook use it to thicken, except for in Chinese cooking where they use it an awful lot.

"Corn" is the american word for Maize.
If you go abroad and ask the older folks, they'll tell you that "corn" used to refer to what americans call "wheat." The Oklahoma song really confused a lot of people. ...But no one calls wheat corn anymore.

Now, Corn is Maize. And Maize is Maize. Except when it's Zea mays.

I think it is different. Although it is called cornflour, it is actually made from wheat. However maize flour is made from corn. It should be perfectly alright for her. Check the packet!

The American equivalent of cornflour is "cornstarch" you can always use arrowroot which is gluten free
